We have three different products with quality processing through check belts.
  The self-sufficiency allow us to control all the process: sowing, harvesting, preparation, production, in such a way that the quality level of our products don't have ups and downs, we always assure the same quality: the best one.
  The potatoes (ecological and homemade) and the ecological corn that we use in "Artesanas de Añavieja" are grown in our own farm in Añavieja (Soria).
  Most of the lads we cultivate are leafy and black ones, they are the rest of a a lake which was drained and channeled in 1930, and now we make use of these lands to cultivate them.
  Our region is specifically cattle raising one, the fact that we have enough manure to fertilize the lands.
  The watering is made by sprinkler, in that way, the land doesn't get narrowed and the potatoes keep up an extraordinary aspect.
  The water is born in the old-lake which is headwater of a river, and join to the fact that this zone has very little population and there isn't any kind of industry, made the water clean and unpolluted.
  The climate is "mesetario", dry and arid, facts that joint to the over 1000 meters height and to the proper care over the growing make potatoes and corn first quality ones.
  POTATOES

We harvest all the potatoes used to produce "Artesanas de Añavieja" by hand, taking care not to damage them.

  We put them in bags and boxes to carry them to our own stores, where the they will be in optimal conditions of temperature and humidity, controlled by thermostats, to get the 100% when they are fried.
  In the factory, following the process, we peel and check them by hand, selecting them and refusing the ones which don't pass the control because of their size or the unripe.
   
  We fry them in a frying-pan with Olive Oil and with Pure Olive Oil (first press when cold) from ecological agriculture, when we fry ecological potatoes.
   
  Once fried, and before packing , potatoes go through a continuous belt, where there is taken the last selection, taking away the burned, crashed and soft ones, or the potatoes with impurities.
   
  POPCORN

The corn from Añavieja's Ecological Agriculture is selected, harvested and peeled by hand.

  Then they follow a natural drying process: corncobs are exposed to wind and the sun in wire silos, where they will be kept for six or eight months.
  We remove the corn from the corncobs with a manual machine, and we fry them in a frying-pan with Olive Oil (first press when cold) from ecological agriculture.
   
  The bags we use are made of white polypropylene and before packing, popcorns pass through a rigorous quality control.
